Yeast (number only):
Minimum Glucose:
(The amount of glucose left at which a yeast "thinks" the glucose has run out, and will process no more.) You will notice that your number for glucose is often the same -- this is your glucose floor. (note that if you are hitting the "alcohol ceiling" (oh my god it's spinning! ), this number won't be apparent, b/c the yeast is dying off before consuming all the sugars. In this case, you'll need to lower your starting sugar values until you get a result below your max alcohol level -- at which point the sugar floors will reveal themselves to you.
Minimum Maltose:
The Maltose floor. Same as above, but substitute maltose for glucose. This is usually a significantly higher number.
Maximum Alcohol:
The alcohol ceiling. The alcohol value above which the yeast will not go despite the presence of *more* than the values of either 1 or 2 above. You'll know you've hit this when your glucose or maltose level is higher than their respective minimums.
Vitamin Consumption Rate:
The rate at which this yeast consumes vitamins. Divide the total amount of vitamins consumed by the alcohol level to determine.
Vitamin floor:
The minimum vitamin level, or the level at which the yeast stops producing alcohol, and effectively "starves".

Flavors:

Entering flavor information is easy. Using a beer that only has the yeast in question, enter amount of alcohol below, along with all of the flavor levels in the beer. There is one tricky part -- Barley, Tannin, Grassy, and Honey flavors are all produced by the ingredients themselves, so you'll need to subtract the expected amount of each of these to figure out how much was contributed by the yeast and not the ingredients.
